A cherished tradition in Maeda-san's family, shaving dried bonito was a beloved pastime for children before meals. This practice transformed a simple culinary task into a delightful ritual. The bonito shaver, once an indispensable tool in Japanese kitchens, holds a legacy of craftsmanship. Historically, katsuobushi kezuri, crafted in the workshop, were even given out as New Year's gifts.

Since its inception, Maeda’s workshop has produced numerous katsuobushi kezuri, serving as an excellent medium for honing fingerwork. The main body of the shaver is crafted from fine Kiso cypress, while the drawer fronts feature unique wood accents. The planing stand is made of durable oak, complemented by the traditional 'aogami' planing blade and iron and silver puller hardware. These elements combine to create a timeless piece, blending traditional techniques with contemporary design, preserving the artistry and functionality for modern kitchens.
